From the manual, "The Look At tool has two states that can be keyframed: enabled (icon pushed in) and disabled (icon in default state). When enabled the constrained object will continually update its orientation during an animation to that of the target object. "

Maybe you had it disabled when making keyframes so it got turned off for the animation.

I also notice that if you do not set the first keyframe it does not work as expected.

Is the Bridge turned on ?
In modelside trueSpace animation, the bridge should be switched OFF to prevent such unexpected behaviors.
I am using the Look_At feature a LOT in my animations, both in autorecord and manual record and it works for me.
Note that I don't use trueSpace 7.61 version though : only tS 7.6. I noticed several bugs in Modelside with tS7.61, that's why I stick with tS7.6
